Assesment methods :
During the semester there will be 2 written tests of 20 points and a final written exam for 60 points. To obtain an evaluation A the students must obtain at least 93 points, for the evaluation B at least 86 points, C rating at least 79 points, D rating at least 72 points, E rating at least 64 points.
Objectives and learning outcomes of the course unit:
Knowledge from chemical thermodynamics, kinetics and coloidal chemistry, their application in food science. After completion of the subject the student is able to apply knowledge in other subjects of his study.
Course contents:
Chemical thermodynamics of biological systems. Chemical Kinetics. Catalysis. The properties of the solutions (Ebullioscopy, cryoscopy, osmosis). Diffusion. Viscosity liquids. Surface phenomena and adsorption. Membranológia. The mechanism of transport across biomembranes. Membrane equilibrium. Koloidika. Structure of colloidal micelles. The stability of colloidal solutions and the abolition of the colloidal state (coagulation, dissolution, peptizácia). Protective colloids, emulsifiers, gels. Electrophoresis, electroosmosis. Dialysis, ultrafiltration, reverse osmosis, sedimentation. Food as a colloidal system. The biological significance of colloids.
