Assesment methods :
During the course will be the one written test 20 points exam, presentation of the essay for 20 points and a final written exam for 60 points. To obtain an exam student must receive at least 93 points for the evaluation of at least 86 points B, C rating on at least 79 points for the evaluation of at least 72 points D and E on the evaluation of at least 64 points.
Learning outcomes of the course unit:
The aim of the subject is provide to graduates a general overview of traditional foods and domestic cuisine,cuisine in Europe and around the world. Approximate raw material composition of individual meals and typical features of individual national cuisines. At the same time, it is based and supported by the legislative framework and the possibilities of certification of regional dishes and specialties.
Course contents:
Legislation and general categorization of national meals.
European portal DOOR as a database of traditional specialties and dishes.
Ark of Taste Database and SLOWFOOD.
Distribution of local dishes by region.
Traditional food and world cuisine.
National cuisine and gastronomic trends.
Certification options for traditional products.
Recommended or required reading:
Language of instruction: Slovak
The subject is intended for several study programs, the Food and Technology Study Program in Gastronomy is taught in the winter semester.
