|The term grade will consist of continuous assessment – one written exam (20 points), presentation of seminar work (20 points) and end-of-term examination – written exam (60 points).|
Grading scale: letter grade A requires minimum 93 points, letter grade B requires minimum 86 points, letter grade C requires minimum 79 points, letter grade D requires minimum 72 points, letter grade E requires minimum 64 points. A student may earn units of credits in grading scale from A to E.
|Learning outcomes of the course unit:|
Acquisition of theoretical knowledge of food allergies and its fields of interest enabling to cope with practical tasks concerning the knowledge about individual types of food allergens and the natural sources of their occurence. After completition of the subject student will understand the workflow for the risk evaluation of potential allergens. Student will be able to analyse and solve possible cross-reactions of allergens in foodstuffs.
Definition of food allergy. Physiological circumstances of food allergies. Classification, biochemistry and molecular biology of allergens of fruit, vegetable, ceerals and animal foodstuffs.Potential allergens. Digestion and molecular safety of food allergens. Methods of allergens extraction, purification and molacular safety assessment strategies. Bioinformatics of food allergens.
