During the semester there will be two written tests for 20 points, written final exam for 40 points and oral exam for 20 points. Students for receive grade exam A (EXCELLENT) need at least 93 points, B (VERY GOOD) at least 86 points, C (GOOD) at least 79 points, D (SATISFACTORY) at least 72 points, E (SUFFICIENT) at least 64 points.
|Learning outcomes of the course unit:|
After completion of the subject the student understands new knowledge about basic milk treatment and about technologies of basic dairy products. Student understands fundamentals of these technologies. Student is able to analyse dairy products, to verify technological operations, to identify and to solve reasons of milk products defects.
|Basic treatment of milk processing plant - clarification and cream separation, pasteurization, homogenization. Production of liquid milks, UHT milk and cultured milk products. Technological procedures for production of cream, butter, curd, natural and processed cheeses, condensed and dried milk, ice cream. Use of by-products (whey, buttermilk)of dairy production. Evaluation and defects of dairy products.|
