Assesment methods :
During the semester there will be 2 written tests with 20 points, written final exam for 60 points. To valuation A student needs to get 93 points, B at least 86 points, C at least 79 points, D at least 72 points and E at least 64 points.
Learning outcomes of the course unit:
After completion the subject the student understands the new knowledge about technological procedures for production of individual groups of meat and dairy products. Student is able to apply obtained knowledge in the production and evaluation of meat, milk, meat and dairy products. Student obtains also the knowledge about the legislation requests for slaughterhouses and plants for the production other animal products.
Course contents:
Animal-health requirements for slaughter operations, the production of meat products companies and milk processing companies. Slaughtering of animals and poultry. Cutting and sorting the meat of slaughtered animals for cutting and production. Basic characteristics of technological processes of production of meat and dairy products. Industrial processing of eggs.
