The subject will be graduated by oral examination. To valuation A student needs to get 93 points, B at least 86 points, C at least 79 points, D at least 72 points and E at least 64 points.
Learning outcomes of the course unit:
After completion of the subjekt the student understzands of legislation (area of meat technology), technological procedures, utilization of progressive technologies and the principles of correct practice production.
Course contents:
Conditions for the establishment and operation of slaughterhouses and meat processing. The principles of good manufacturing practice from the treatment of animals for slaughter. Cutting, sorting and packaging of sliced ​​meat and production. Ingredients and additives used in the manufacture of basic product groups of meat products. Production of fermented meat products and the use of advanced technologies. Management and control of quality meat products
