The subject will be graduated by oral examination. To valuation A student needs to get 93 points, B at least 86 points, C at least 79 points, D at least 72 points and E at least 64 points.
Learning outcomes of the course unit:
After completion of the subject the student understands knowledge about the inhibition factors in meat fermented products, the microbial cultures employed in meat products production and technological additives consequence and composition.
Course contents:
Characteristics of durable meat products and meat foods pretreated. Basic and auxiliary materials, their treatment and quality control in the process of production. Ferment and their characteristics and uses. Manufacturing technology of fermented meat products and meat foods . Requirements for technological equipment operations in terms of the provisions of Codex alimentarius SR and legislation of EU.
