Title of the thesis:Cocoa and its importance in the human nutrition
Summary:The most popular and best-selling sweet in the world is chocolate, whose main ingredient is cocoa. There are many kinds of chocolate. However, "healthy chocolate" is the one that contains more than 70% of cocoa, which is attributed to many positive health effects on the human organism. The aim of the work was to find and process available literary sources about history, botanical characteristics, chemical composition of cocoa and its effect on the human organism. Cocoa beans are rich in fat, containing at most about 50%. Cocoa fat is the most represented protein, and carbohydrates contain mainly starch, cellulose and simple sugars. It also contains fiber that is present in cocoa shells. Cocoa also contains vitamins and minerals that improve its nutritional features. The work has confirmed that cocoa plays an important role in human nutrition. Cocoa and chocolate consumption has many advantages. Benefits include the effect of cocoa on the cardiovascular system, it can reduce blood pressure and the risk of heart attack and stroke. It contains methylxanthines, which have a CNS-stimulating effect. Polyphenols have an antioxidant effect. It can also affect the development of diseases such as diabetes or obesity.
