|Project description:||Prevention is becoming important element for people health regulation and interest about functional properties of traditional foods is increasing. In addition, attention to less-used horticultural crops, e.g. batatas, butternut squash, basil, is raising. They are rich sources of various bioactive substances (carotenoids, vitamin C, chlorophyll, essential oils) with advantageous properties for human health and cell senescence. The occurrence of celiac disease has been increasing and it is necessary to find alternative possibilities for preparation of baked products (bread, biscuits), e.g. product enhancement about addition of gluten-free flour substitutes (batatas, butternut squash) and seeds (basil) which could improve taste and antioxidant properties of gluten-free baked products.|
