Project description:
The project deals with the safety and dual quality of selected foods of animal origin. In the project, the most suitable genetic markers will be designed to monitor the authenticity and traceability of selected food types. The basis will be identification of the marks to determine the second identity in the raw state and after different stages of heat treatment. DNA molecule damage will also be monitored at different stages of processing and preservation. The project will use a variety of isolation techniques for the quality and purity of the obtained DNA of each animal species, microsatellite and microarray techniques and available DNA chips.
