In accordance with the latest EU waste management principles are preferably searched wasteless technology. Based on knowledge of nutritional benefits and volume production of grape pomace as a secondary waste product in wine technology is special attention paid to their effective use in the agricultural and food sectors in recent years. The aim of this project will be the use of grape pomace from different varieties of blue (red) and white wine grape growing in Slovakia for production of innovative bakery products and beer with higher nutritional value and attraction for the consumer.
