Legumes as kidney bean, lentil, chickpea, lupin and faba bean are characterized by high content of proteins, vitamins, fiber, as well as by significant content of polyphenolic substances with high antioxidant activity. These crops at present non interesting for the agricultural sector have had in Slovakia long tradition of culinary using. The rise of functional foods can be developed by their using with the combination of conventional raw materials.
