The objective of the project was to examine the quality of light and heavy slaughter lambs by means of evaluation of physico-chemical and sensorial properties of meat, and mainly of the profile of fatty acids in intramuscular and extramuscular fat in dependence on the production system (dairy or meat breeds) and lambs weaning system (milk replacer versus nursing system in light lambs and extensive dam-lamb pasture system versus intensive concentrate feeding in heavy lambs). Stress have been laid mainly on fatty acids beneficial to health and on essential fatty acids.
