Project description:
The project implementation includes suggestion, verifying of developing options and analysis of various modifications of functional food with using of non-conventional and minority crops such as pseudocereals, legumes and small forest fruits. Chemical and biochemical analysis will be focused on determination of allergenic agents content, polyphenols content, content of selected vitamins, antioxidant activity, content of macronutrients, selenium and another essential trace elements. By project implementation new knowledges about new type of foods suitable for daily consumption as well as foods for celiac patients with not only sufficient nutritive value, but also health beneficial character will be abtained.
