|Project description:||Potatoes and tomatoes are an important source of nutritional and bioactive components; many of them have antioxidant properties. Eggplant is a crop which is less frequently consumed, it is a good source of fiber and contains very small amounts of saturated FA, cholesterol and Na. Slovakia is one of the countries ideal for the production of garlic which contains a number of biologically important materials. One of the most important components is alliin, the precursor of allicin. In the structure of plant production retain an important position pulses, which are an important source of vegetable protein. Legumes as kidney bean and peas are characterized by high content of vitamins, fiber, as well as by significant content of polyphenolic substances with high antioxidant activity, too.|
