|Project description:||Fruits and vegetables are consumed fresh, but as they stays in this state for a limited time, further ways of their processing are searched for they can keep bioactive substances as long as possible. One of them is their processing into juices. An important place is given to natural substances that exhibit antioxidant properties. Such substances include selenium. By crops fortifying with selenium, its content is raised in edible plant parts. The aim of the project is to monitor the effect of differentiated mineral nutrition of selected horticultural crops enriched with selenium on increasing of the content of biologically important substances, as well as on antioxidant activity in fruit-vegetable juices.|
