|Project description:||The project deals with the physical properties of food and food materials -- food sources utilization at appraisal of the final products quality. Project is oriented to the experimental investigation of electrical, thermophysical, sorptive, structural, moisture, rheological and other properties of selected food materials, description of the phase transition, dehydration, thermal degradation and other physical processes running in the materials. As a result of the project is to appreciate the influence of analyzed processes on the quality and safety of the food and food materials.|
