Potatoes rank among the most important agricultural crops. The value of tubers is determined mainly by their chemical composition. They are significant source of saccharides, vitamins, proteins, minerals, colours, phenols. They are also the source of toxic glycoalkaloids. Many different factors affects all of the components, which by significant range influence the qualitative parameters of potatoes. Onion is vegetable consumed not only in fresh state but also after technological processing form. It is the important source of substances beneficial for human organism: phenolic acids, flavonoids, thiosulfinates and anthocyanins. Many epidemiological studies have reported that the consumption of onion helps in reducing of the risk of arising many chronic diseases.
